What Is a Grease Trap and Why Does It Need Service?

A grease trap — also called a grease interceptor — is a plumbing device installed between kitchen drains and the municipal sewer system. Its job is to capture fats, oils, and greases (FOG) before they enter the sewer, where they would solidify, cause blockages, and create significant liability for your restaurant.

Grease traps only work when they're maintained. As grease and solids accumulate, the trap loses capacity and grease bypasses the device. Regular pumping restores capacity and keeps you in compliance with local FOG ordinances.

  2. Open trap, measure grease and solids depth, photograph condition
  3. Vacuum all contents — grease cap, wastewater, settled solids
  4. Scrape walls and baffles to remove adhered grease
  5. Inspect baffles, inlet/outlet pipes, and trap cover for damage
  6. Replace trap cover, clean surrounding area
  7. Complete service manifest — volume, date, tech ID, disposal method

Grease Trap Compliance Requirements

Every major city in the U.S. has a FOG (Fats, Oils, and Grease) control ordinance that applies to commercial kitchens. These programs typically require restaurants to maintain grease traps, pump them on a regular schedule (often quarterly at minimum), and submit service manifests to the local sewer authority.

What's the difference between a grease trap and a grease interceptor?
They perform the same function but differ in size. Grease traps are small, indoor units (typically 25–100 gallons) installed under sinks. Grease interceptors are larger outdoor units (500–5,000+ gallons) installed underground. Grand Natural services both.
